The invention of genuinely new coffee-making methods is infrequent, and most share a common element: the application of heat. Hot water is traditionally used to rapidly extract flavor and body from coffee grounds. However, Osma, a recently developed device, employs a completely innovative technique to produce a rich, robust, espresso-like beverage at any temperature, even icy cold – potentially reshaping the coffee industry.
From Speakers to Coffee: The Genesis of Osma
Osma represents the latest endeavor from designer Joey Roth, whose work has transitioned from advanced speaker technology to both tea and coffee innovations. He has successfully integrated these seemingly unrelated areas with a unique vibratory extraction method. This project could prove to be his most significant achievement to date.
Understanding Traditional Coffee Extraction
To appreciate Osma’s innovation, it’s essential to understand conventional coffee brewing, which typically falls into two primary categories: soaking the grounds in hot water or forcing water through them under pressure.
The Methods of Soaking and Pressure
Methods like drip, pour-over, and French press rely on the heat of the water to passively release oils and volatile compounds from the coffee beans. The spent grounds, having yielded their flavor, are then filtered out.
Espresso, conversely, extracts desired compounds not only through heat but also via microcavitation. This process involves the release of CO2 from the grounds due to heat and pressure, forming minuscule bubbles that rapidly collapse. This collapse forces out flavor and aroma compounds.
The Challenges of Cold Brew
Cold water can be utilized in the soaking method, preserving substances susceptible to heat degradation, resulting in a distinct flavor profile. However, achieving desired strength can take hours or even days, and other desirable compounds can deteriorate over this extended period. Furthermore, steam is crucial for extraction in the espresso process, making cold water unsuitable.
The Popularity of Cold Coffee and the Osma Proposition
Despite the drawbacks of cold coffee preparation, its popularity has surged in recent years, particularly during warmer months. The demand remains strong, even if it often involves simply adding ice to hot coffee or espresso. Osma proposes a solution: the ability to create strong, flavorful coffee without heating, diluting, or lengthy brewing times.

To the best of my knowledge, the Osma system introduces a brewing method unlike any other. It continuously circulates water through the coffee grounds, simultaneously agitating them with a standing pressure wave. This process yields 8-12 ounces of coffee, possessing a concentration between espresso and cold brew, in approximately two minutes.

“This represents a fundamentally new coffee experience that must be tasted to be understood,” Roth stated when asked to describe the flavor. He initially compared it to Kyoto-style slow drip, enhanced with the creamy texture and brighter notes of espresso, but ultimately deemed the analogy imperfect.
His assessment is accurate, as the method is truly distinct. Beyond utilizing cold water and acoustic waves for cavitation instead of high pressure, the Osma Pro features a circulatory process, unlike traditional one-way brewing.
A Circulatory Brewing Process
Most coffee-making methods are unidirectional: water enters, interacts with the grounds, and coffee emerges. Percolators are a notable exception, though not favored by coffee connoisseurs. The Osma method, however, draws water up, passes it through the grounds, agitates it, and then returns it to the same vessel for repeated cycles.
This circular process can be halted at various stages to control brew strength, with Roth recommending approximately two minutes for optimal results.
The Serendipitous Development of the System
The creation of the Osma system was a blend of chance and ingenuity. Roth recounted an experiment with co-founder Dan Yue, involving boiling water at room temperature in a vacuum chamber, which yielded limited success. Yue theorized that microcavitation was the key to extraction without significant heat.

Image Credits: Osma“We confirmed this through further experimentation, establishing that microcavitation was indeed the critical factor,” Roth explained. “We then dedicated about two years to developing a mechanism to efficiently facilitate cavitation using acoustics within a tightly packed basket of coffee grounds. With the valuable contributions of our partners James and Hiver (co-founders of Chromatic Coffee in San Jose), we brought the Osma Pro to fruition.”
Potential Impact on Coffee Shops
The ability to consistently produce a strong, cold coffee drink with characteristics of both espresso and cold brew could significantly benefit coffee shops. Currently, they must anticipate demand for cold brew, risking shortages or resorting to iced hot coffee, a compromise solution.
Pricing and Design Considerations
At $695, the Osma Pro is a substantial investment for home users, but it aligns with the cost of equipment commonly found in cafés. Like Roth’s previous designs, the industrial aesthetic is minimalist and elegant. Its compact size (comparable to a standing grinder) and the space saved by eliminating the need for large batches of cold brew further enhance its appeal.

Roth revealed that a major coffee company has expressed interest in partnering with him on the machine. While selling a few hundred units to specialty coffee shops is encouraging, and pre-orders have exceeded expectations, a partnership with a larger distributor could propel Osma into a global business.
From Pods to Pro: The Evolution of Osma
The initial concept for Osma involved a portable, battery-powered device utilizing biodegradable coffee pods and a scaled-down version of the acoustic agitation process. However, this proved to be a developmental detour, as the countertop version rapidly demonstrated greater potential.
The Question of Nomenclature
The primary remaining challenge is naming the new beverage. I suggested “coldpresso” (with “icepresso” as a more pleasing alternative, though potentially confusing), while Roth considered “cold flash” but found all options uninspired. Regardless of the name, it’s likely to appear on the menus of specialty coffee shops soon.
